Onion Galette

This onion galette is a super fancy yet simple meal. The simple crust is filled with caramelized onions and baked until cozy, warm, satisfying, and delicious. You can easily pair this Onion galette with a salad for a complete meal. A galette is essentially a rustic, free-form pie, and I find this lazy approach much easier and more satisfying to make than the real pie. It can be customized in so many ways and it’s made with simple ingredients. Galettes can be either sweet or savory; whatever you put into a pie, you can probably put into a galette. The homemade crust is simple to make. With the aid of a food processor, it comes together in a wink. The main effort would be caramelizing the onions. The trick is not to rush it; let it take close to 45 minutes to caramelize to brown color at low heat.
