They are so easy to make, versatile, and utterly delicious. Adding dates to the carrot cake makes it moist and rich. We make these moist, sweet, and decadent muffins over and over again. They are just that yummy and perfect for breakfast or an after-school snack. You may add raisins and/or nuts to the batter as desired.
