Carrot Halwa also known as Gajar Halwa is an Indian sweet made with a delightful combination of fresh carrots, ghee, milk, khoa, nuts, sugar, and cardamom powder. Carrot halwa is a winter delicacy popular at festivals, weddings, and special occasions. Probably one of the most popular desserts after kheer or Indian rice pudding and gulab jamun. You will need just 7 basic ingredients, some time at hand, and a lot of patience to make the best carrot halwa. It has a mild sweetness and the combination of flavors is simply mind-blowing.

There are different variations of this carrot halwa dessert. Some make it with cream; others with Khoa or condensed milk. This carrot halwa recipe uses Khoa to give the extra creaminess. This dessert is garnished with cashew nuts and flavored with cardamom powder and is best served warm. This recipe is vegetarian and gluten-free. You can double or triple this carrot halwa recipe as per your requirement. The cooking time will increase as the milk will take more time to reduce. Carrot halwa is best served hot on its own or with a scoop of vanilla ice cream. It can be served at room temperature too. Top it with loads of slivered roasted nuts for extra crunch. Ingredients to Make this Carrot Halwa

  1. Carrots: It is essential to use fresh, sweet, and juicy carrots to make the best-tasting halwa. You may use any type of carrots, but they should be sweet and juicy to make this carrot halwa. I have used 1 kilogram of carrot here which is grated to make the carrot halwa.
  2. Milk: Use full-cream milk for the creamy and rich carrot halwa. With low-fat milk, Halwa will not be as delicious and creamy as it should be. I have used 3 cups of full-cream milk in this recipe.
  3. Sugar: I like my carrot halwa mildly sweet, but you can definitely adjust the sugar as per your taste. You can also replace the granulated white sugar with brown sugar or powdered jaggery. I have added 3/4 cup of sugar, making this carrot halwa perfectly sweet.
  4. Ghee: Ghee makes the carrot halwa shiny, flavorful, and luscious. You may add a little less or more ghee as per your preference. I’ve used 1/4th cup of ghee in this recipe.
  5. Cardamom Powder: It adds a pleasant, warm, and sweet flavor to this carrot halwa and makes it more delicious. ½ teaspoon of cardamom powder is added here.
  6. Khoa : Adding khoa to this recipe makes the carrot halwa extra creamy and delicious. 1 cup of khoa is used in this recipe.
  7. Roasted Nuts: I have added chopped cashews to this recipe. You may add almonds or pistachios too. Nuts add their nutritional value to the carrot halwa and make it rich and delicious.

How to Make the Carrot Halwa

  1. Roast the nuts: keep a pan on medium heat. Add ¼ cup of ghee. Roast 20 cashew nuts, broken into pieces, till they are golden brown. Keep them aside.
  2. Cook the carrots: into the same pan, add 1kg carrot, grated. Sauté for 5 minutes till the color changes. Add 3 cups of full-cream milk. Cook the carrots in the milk. Keep stirring the mixture till the carrots are cooked and the milk thickens.
  3. Add sugar and khoa: Add ¾ cup of sugar to the carrots. Stir till the sugar is dissolved. Add 1 cup khoa. Keep stirring the mixture till ghee releases from the sides.
  4. Add the nuts and cardamom powder: Take the pan off the heat. Add ½ teaspoon of cardamom powder to the halwa and mix. Add the roasted nuts and mix. Let it cool a bit and serve it with a scoop of cold vanilla ice cream.
